These tender and flaky mini cakes created by the dynamic duo of Timothy Flores and Genie Kwon at Kasama, a modern Filipino bakery and restaurant in Chicago, highlight the cultural phenomenon of ube, a purple tuber native to the Philippines.

Ingreadient :
Basque Cake Batter
  • 2 cups bleached cake flour (such as Swans Down) (about 7 1/2 ounces)
  • ½ cup all-purpose flour (about 2 1/8 ounces)
  • 1 ¼ teaspoons baking powder
  • 1 teaspoon kosher salt
  • 1 ½ cups granulated sugar
  • 1 cup unsalted butter (8 ounces), softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
Ube Jam
  • 1 small (about 7-ounce) fresh ube, peeled and cut into 1/2-inch pieces (about 1 1/3 cups)
  • ¾ cup heavy cream
  • ¾ cup granulated sugar
Pastry Cream
  • 1 large egg plus 1 egg yolk
  • 3 tablespoons dark brown sugar
  • 3 tablespoons granulated sugar
  • 1 tablespoon bleached cake flour (such as Swans Down)
  • 1 cup heavy cream
  • ¾ teaspoon vanilla extract
  • ¼ teaspoon kosher salt
Additional Ingredients
  • Cooking spray
  • 1 cup fresh or frozen huckleberries or wild blueberries (about 6 ounces)
  • Powdered sugar
