Jumbo Brownies

"Like all great desserts," says Anne Quatrano, "these brownies have only three pertinent flavors: chocolate, butter and walnuts." Quatrano, an F&W Best New Chef 1995, is the chef of a small empire of restaurants in Atlanta.

Ingreadient :
  • 1 pound unsalted butter
  • 1 1/2 pounds semisweet chocolate, chopped
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 6 large eggs
  • 2 1/2 cups sugar
  • 2 tablespoons pure vanilla extract
  • 2 tablespoons strong-brewed espresso
  • 6 ounces semisweet chocolate chips (1 cup)
  • 1 cup walnut halves, lightly toasted and coarsely chopped (optional)
