"In Japan I got into all different flours, like roasted soy flour," says Stella Parks. "Then I thought, Why not use nut flour to make gluten-free brownies?"

Ingreadient :
  • 7 ounces hazelnuts
  • 1 cup plus 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon salt
  • 3 cups sugar
  • 1 pound (4 sticks) unsalted butter
  • 12 ounces bittersweet chocolate (70 percent), chopped
  • 6 large eggs
  • 1 tablespoon instant coffee dissolved in 1 tablespoon of hot water
