Breakfast Tacos

A good breakfast taco is a thing of beauty. Not only will these keep you full until lunch, they've also been known to cure a mean hangover.

Ingreadient :
  • 1 large russet potato, peeled, chopped into 1/2" pieces
  • Kosher salt
  • 1 Tbsp. (or more) extra-virgin olive oil
  • 1/4 small yellow onion, finely chopped
  • 4 oz. fresh chorizo sausage, casing removed if necessary
  • Freshly ground black pepper 
  • 2 Tbsp. unsalted butter
  • 3 large eggs, beaten to blend
  • 4 medium flour tortillas
  • 1/2 c. shredded cheddar
  • Hot sauce, sliced scallions, sliced avocado (optional), and pickled onions (optional), for serving
